Biophysical characterization and quantification of waste from the meat sector of the city of Quito: case study of the Quito Metropolitan Trace Company EMRAQ-EP
According to the UN for the year 2026, forecasts indicate that meat production will increase by 13% compared to the 2014-2016 period. On the other hand, health control agencies seek to achieve a balanced diet to prevent diseases, where meat proteins will replace carbohydrates; consequently, the slaughter process must be efficient to achieve maximum utilization of the slaughtered animal. This research has the purpose of evaluating losses and waste in a slaughterhouse, taking as reference the EMRAQ-EP for its capacity of 600 cattle per day in addition to other species. Based on the EMRAQ-EP records, losses and wastes were determined in biophysical terms related to water-soil-energy, of the species: cattle, pigs and sheep. To perform this analysis, we worked with the MUSIASEM methodology, an instrument that allows us to know the socio-ecological system by identifying the weaknesses and potentials of the food system. The results show the values of losses and waste to have a clearer vision and achieve reduction in meat production, also providing proposals to optimize slaughter processes and the reuse of derivatives.
